TIM JOHNSTONE - Head Chef

With over 20 years of culinary experience dazzling palettes From Winnipeg to Vancouver, Tim truly is a Canadian Chef. Born in Saskatoon where, at age 16, he discovered his flair for cooking after accidentally stumbling into the kitchen at a local hotel. Upon completing a 3-year cook's apprenticeship Tim worked in a number of Saskatoon's finer restaurants before making his way west to Vancouver.

With stints as Executive chef at Le Pappillote Provencal in the eighties to Executive Chef at Zeppo's Trattoria in the nineties Tim has received favourable press from the Vancouver Sun, Georgia Straight and other local circulations. Along with a healthy addiction to the adrenalin rush of a busy kitchen Tim loves to experiment and cross cultural boundaries in his search for epicurean perfection. Tim was recognized in 1992 by Chefs of America as one North America's up and coming new chefs for his Italian Westcoast Menu at Zeppo's.

Dinner at Giggle Dam

In 2003 Tim joined the cast and crew at the Giggle Dam and has been putting the "Dinner" into our Dinner Theatre ever since. Italian, French and Asian influences will be found in Tim's cooking. His soups and sauces are superb melodies of simple yet complex flavourings. Ample portion sizes and mouth-watering flavour profiles guarantee you will not go home hungry!
